久々に時間をかけて夕飯支度してみました。
スーパーで若鶏のもも肉が3枚で900円をゲット・・・これをコンフィーに

60度程度の油で3時間火を通し、食べる直前に皮面をカリカリに

  • 鶏もも肉の筋切りをして、塩胡椒し、皮面を外にして巻いて、凧糸でとめる
  • 60度（指を入れられる限界か？ぐらい）のサラダ油でじっくりと火を通すこと３時間
  • フライパンにニンニクとパセリで香りを出して、外側をカリカリに焼く
    （焦がさないように火の調整）
  • 凧糸を切って、お皿にマッシュポテトを敷いて、その上に載せる（丸いので滑らないように）

中はほろほろ、ジューシーに、外はパリッと仕上がりました。
ソースはマスタードとブルーチーズをマヨネーズで練った特製ソースでなかなかのマッチングにできました。

添え物はべにはるかと先日買ったバターナッツカボチャをシンプルに塩で

スープは野菜のポタージュ

お米の代わりに焼きたての自家製カンパーニュ風パン😆

敬老の日には少し早いですが、祝い飯になりました。
