近くの野菜直売所で格安で冬瓜とピーナッツバターカボチャをゲットできたので、今夜のメインは、買い置きの北茨城名物のメヒカリを唐揚げに添え物はピーナッツバターカボチャの天ぷらに

お椀は冬瓜、にんじん、生姜の澄まし汁

副菜に茄子と空芯菜と余ったちくわの炒めポン酢びたし

  • ナス一本　ざくぎり+皮面に切り目
  • 空芯菜：5〜６本　5センチぐらいに切って
  • ちくわ：斜めに切って（ちくわでなくても、あまったかまぼこやこんにゃくでもOKか？）
  • ごま油で生姜、ナスを炒め、空芯菜を茎の部分から炒めます。
  • ざっと油を吸ったら残っている空芯菜とちくわも豆乳
  • 塩胡椒少々してポン酢をぶっかけ、ざっくり回してふたをして1分程度蒸し焼きで完成
  • 粗熱とって、冷蔵庫で冷やしてから盛り付け

小鉢に余った玉ねぎと茗荷の甘酢漬け+カボス

箸休めに玉子焼きにスルメイカの塩辛

ご飯は玄米

健康的な食事ができました。
